Burgundy is one of the oldest wine producing regions in Europe with production dating back to 1st century AD. It was only in the middle ages however when it became well known and the catholic monks began growing grapes to produce wine for the Church and the Dukes of Burgundy. Burgundy is famous for its Pinot Noir and Chardonnay, both of which originated here and it is in this area where the flavours of these grapes are expressed at their fullest and richest. The region is renowned for its terroir and vineyards only metres apart can produce wines which taste vastly different from the same grapes. Limestone soil is the secret behind the minerality which is the hallmark of Burgundian wine.

Conceived under Louis Xi and completed under Francois 1er, the medieval Bastion at the heart of Domain Chanson and indeed Beaune is dedicated wholly to the ageing and safeguarding of wines from Chanson’s 45 hectares of exclusively Premier and Grand Cru Vineyards. The four storey high structure with 8 metre thick walls provides an exceptional atmosphere for the maturation of fine Burgundian wines maintaining a constant level of temperature and humidity. The Bollinger family took ownership of the Domaine in 1999.
